Chicken and Spinach Baguette Sandwich
Ingredients
Sandwich
- 1 COBS Sundried Tomato French Baguette or Traditional French Baguette
- 1 roasted chicken breast (shredded or sliced)
- 6 fresh baby spinach leaves
- 4 slices fresh mozzarella
- 2 slices bacon
- 4 slices red onion
Basil Dijon Aioli
- 1/2 cup mayonnaise
- 1/2 Tbsp olive oil
- 6 large basil leaves
- 1 large garlic clove
- 1/2 tsp fresh lemon juice
- 1 Tbsp dijon mustard
- Salt & pepper to taste
Directions
Combine all ingredients for the aioli in a small food processor and pulse until the basil is chopped and the ingredients are combined. This will last in the refrigerator for about 3 days.
Spread the aioli on the baguette and layer with fresh spinach leaves, mozzarella slices, chicken, red onions and bacon.
