Breakfast Toast Cups
In this recipe: Higher Fiber Loaf
You can choose to make this recipe using regular or mini muffin tins!
Ingredients
- 3-9 slices of COBS Bread Higher Fiber Loaf
- 6 Eggs
- 6 Bacon Strips, cooked
- 3 tbsp Chives, finely minced
- 3 tbsp Grana Padano, finely grated
- 3 tbsp Cooking Oil
Directions
- Preheat oven to 450F.
- Using a bread knife cut the crusts off 8 slices of COBS Bread Higher Fiber Loaf.
- If you are using a mini muffin tin you will likely only need 3-4 slices, and should cut each bread slice into quarters.
- Brush cooking oil into the muffin tins & place bread in so it sits nicely.
- In a bowl whisk eggs, chives, and Grana Padano.
- Fill each muffin tin with the egg mixture, approx 4 tbsp of mixture.
- Top with desired amount of cooked bacon crumbles.
- Bake for 12 minutes or until breakfast cups are golden brown in color.
