Roasted Asparagus Recipe
Make the most of asparagus season! This recipe creates perfectly roasted asparagus, and then we top it with a full-flavored breadcrumb topping. The breadcrumbs are made with our Sourdough Loaf then seasoned with lemon zest and parmesan.
Ingredients
- 4 COBS Bread Sourdough Loaf Slices
- 1 lb Asparagus
- 2 tsp Olive Oil
- Salt & Pepper to Taste
- Zest of 1 Lemon
- Parmesan, to garnish
Directions
- Preheat oven to 425F and prepare 2 parchment-lined baking sheets
- Snap off he base of each asparagus and discard. Add asparagus to the baking tray
- Drizzle asparagus with olive oil and season with salt & pepper. Toss lightly with your hands
- On the other tray, place your sourdough slices
- Bake sourdough for 10 minutes, until slices are completely dried out.
- Bake asparagus for 12-15 minutes
- Roughly tear the baked sourdough into medium pieces and put into a blender. Pulse until it resembles breadcrumbs
- In a medium-sized bowl, mix breadcrumbs, lemon zest and parmesan. Toss until combined
