Sweet Potato, Blue Cheese and Salami Open-Faced Sandwich
Ingredients
- 1 slice COBS Cape Seed Loaf, toasted
- ¼ cup peeled and cubed sweet potato
- ½ tsp olive oil
- Pinch salt and pepper
- 2 tsp butter, softened
- 4 thin slices salami
- 2 Tbsp crumbled blue cheese
Directions
In a small bowl, combine sweet potato, olive oil, salt and pepper. Arrange, in a single layer, onto a greased baking sheet. Bake in 400°F oven until lightly golden and softened, about 15 minutes. Set aside.
Spread butter onto one side of bread. Top with salami, sweet potato and blue cheese.
